Who should I give "x" sphere to?

Whose part of the grid should I place magic/agility/luck/etc spheres on? Or who could use each of these spheres the best?

Magic should go to your mages, strength to your physical attackers. I give luck to Wakka.

Try to find nodes on the grid that other characters can easily get to, so the stat sphere can be shared.

I'm using the expert grid in my current playthrough. I managed to get Lulu and Yuna sharing a magic sphere and Auron, Wakka and Tidus sharing a strength sphere.

Eh, it really doesn't matter. The game is completely doable with the stats that are already on the grid. Just give them to who you think it fits best, or who needs it the most.

Magic to whoever will be your offensive caster (Lulu by default, but if you plan on giving Yuna some sweet black magics then buff her up)

Strength spheres are your call, I'd give them to Wakka who sometimes seems to be killing flyers by *just* enough, and makes it a bit more useful in other situations (such as boss battles). Plus he's got Attack Reels.

Luck spheres I'd give to Tidus because his overdrives can crit, while Wakka's don't. Don't place the luck nodes before double-checking you got a Fortune Sphere to activate it, and NEVER waste a fortune sphere on a less than +4 node.

Dunno what other stat spheres you get along the way, by the end you can get them infinitely though, so this is only relevant for the main course.

Depends. I suggest if you're just getting them in the story to use them how-the-****-ever you can make use of them.
Now if you are in the Monster Arena, you'll be using them to level up. It's a pretty good way to farm, I think. It's efficiency pleases my German half. Of course, you'll end up with a ton more MAG DEF Spheres than you'll need (One-Eye should be fought at least a dozen times), but it's worthwhile.
