She didn't HAVE to do it, especially when she realized the futility of it after Frey told her that he'd "Just get another one". She meant so little to him, what satisfaction could Cat possibly gain from killing her? I realize she was mad with grief, but still...

I know it was a final "jab" to get back at the Freys, but it was so fruitless that I couldn't help but pity Cat after the deed.

She was justified in the threat. She had to carry it through if Walder did not comply.

Two things: First, she said she would. Second, she just watched he son get murdered. She was filled with grief and anger. If she had been a little more objective, she might've used her as a shield to facilitate her escape but as it happened, she just wanted to kill something.
