I'm quite sure that Bowser is a digital illustration.

The Wind Waker drawings probably draw stylistically from Illuminated Manuscripts and folkloric art.

Blacksad looks to be watercolor. Not sure if you're questioning about style here, but I'd imagine the style to come out of the artists's myriad of influences.

Scott Pilgrim is likely inked in the same way most comics are (which I'm not entirely familiar with, but you could probably Google that process in depth).

And I speculate that Monsieur Jean is sketched by hand, lines digitally darkened, and then digitally colored.

Thanks a lot man! We really live in a digital age.. Quite sad, because the water color art in Blacksad is really charming.
