but if you already have a herber, seriously, enchanting goes nicely.

See above. Herbalism + Inscription will give you the least headache, because Inscription mills herbs for the inks it needs, in much the same manner that Jewelcrafting did with ores for it's gems.

If you have an established Herbalist and don't mind the hassle of mailing mats back and forth, then Enchanting is another good one to take, or possibly Tailoring if you're a cloth wearing class. Those options work because Tailoring needs no gathering profession, and Enchanting is its own gathering profession.
