Have all professions max out throughout my characters. Question is, what professions are best to have two of?

I started another character and I know I'm going to have Alchemy as one just to have another character for transmute, but is there another profession I should take that has like once a day cooldowns or just the best self benefits?

I'm thinking Enchanting just for the extra DEs in instances and nice ring enchants. Due to Imperial silk and Scrolls of Wisdom not being exchangeable, I'm leaning away from Tailoring and Inscription (also so I don't have to farm twice as many herbs).

The best are Engineering and any other crafting (although BS will pull ahead at the end of the expansion).

The engineering glove enchant is the best stat bonus (statistically it averages out to the same bonus, but using it at will for big cooldowns is huge). The other engineering abilities like belt and cloak enchants are very nice in certain situations.

BS will pull ahead when epic gems come out.
