After doing some tanking I gotta say dps.
One one hand I feel less pressure than as tank/heal, on the other everything I can do to perform better has direct impact on the raid.
And if I cba, I can just mindlessly pew pew :p

DPS.

I've healed Naxx, Ulduar, and 3/4th of ICC, then DPSed the last few months of Wrath
During Cata, I did some healing, and tried some tanking during early-mid Cata, switching to full DPS when DS launched.

After having done all 3 rolls, I like DPSing.

For me playing dps as a class/spec I haven't played before or for a long time is fun at first, but I quickly grow bored of it. I never seem to tire from healing however, it's always interesting.

I'm of course talking about cutting edge heroic progression though, healing lfr/normals is boring as hell unless you play disc, and even heroic farm becomes boring to heal after you start to out gear it.

Tanking.
Every fight just feels so distinct and involved, and you can adjust your playstyle without "gimping" yourself just by knowing what you're doing. A lot of strategizing and planning ahead, and so many of the cool jobs go to me.

Plus, I like that what I do matters. If I mess up it's pretty much a wipe. It's not as much fun if all your work is just to get the highest "score" in the end.

TBH tanking is the easiest role in the game atm, but yes it can feel like you're special :p.

So you're implying that there is only 1 possibility, that all roles are exactly the same in difficulty. Also a role being 'hard/difficult' is subjective, but a role can be harder/easier.
