So if a server is in Los Angeles and I'm in NJ it won't affect my gameplay?

The time zones don't always match where the data centers are. However, the distance to the data center may affect your latency slightly, although unless you're trying to get onto a server on the other side of the world it shouldn't be too bad-- I play on an PST server from the midwest and usually have 80-120ms latency.
If you're not sure, roll up a level 1 on your intended server and play around for a bit; if it's too high, try again in a day or two, just in case it's your connection.
