So if Catherine was an ''illusion'' and wasn't real in this realm so only vincent could see her blahblah.....how did Katherine hear a toilet flush at one point? lol vincent makes some lame excuse about it being his boss or something.

It isn't that she was only visible to Vincent, she is a demon and can manipulate the human world. So she can interact with the world like any other thing. And remember the only people who also saw Vincent physically with her is the bartender...who is also a demon and lied to Vincent. ;)
