probably less people playing the demo simultaneously due to its much shorter length, thus less of a load on the servers and a more reliable service.

More people play demo online than full game online.

Maybe gimping the PS3 version in some way was part of the huge money deal MS made with Capcom, and Capcom chose to gimp the servers (at least temporarily). I predict they'll 'ungimp' once the multiplayer modes release and their contractual obligation to MS's deal is over.
