Are there recommended Soul Levels for each boss?

I mean, I'm currently a Thief with SL 15 and I'm at the 2 Gargoyles Boss. I played extremely defensively and got the first Gargoyle down to ~35% health left then the other Gargoyle showed up and I got demolished.

Should I farm for souls to increase my Soul Level to the 30s before I attempt this boss?

stats matter more than soul level. You could for all we know have an anemic full dex Thief with no Vit whatsoever *cough cough

No, you're about at the right level. If you really can't beat them alone then go into human form and summon solaire.

Yeah that's what I did. I farmed souls up to lv. 23, or 25, I don't quite remember. You must roll all the time until you are at the back of the first gargoyle and land some quick hits/spells before the second one comes. I f you manage to kill quickly the first one then you have some chances to survive.

Your level has a lot less of an effect than you'd think. Try to farm some humanity and turn human so you can co-op the boss. Alternatively spend the souls to upgrade your weapons. Until you get to really high levels with weapons that scale well, leveling is only really necessary if you need a specific stat up to fulfill a weapon's prerequisite.

Playing defensively against the gargoyles will get you killed. You need to go at the first one full force and drop him ASAP.

Play defensively against the second one. You can't be defensive when it's 2v1, especially when the two are bosses.

IIRC my Vitality is 9 (lol) and my END and DEX is the only things I've leveled. (They're both 16)

Yeah, you'll want to start boosting vitality... lol. Anyway, if you have any resin you should be able to just charge in and kill them both very easily. It's what I've done both times :)

go after the first gargoyle stay close and make sure to block when he uses his tail, and dodge when he swings his axe. to make the fight easy use drake sword or use lightening.

What I did was melee down the first one, then finished him off with a couple firebombs when the second one arrived, then just continued to melee that one down till dead. Stats were:

10 Vit
18 Dex

And had a Scimitar + 1
