What are the pros and cons of each shield? For shields is stability one of the main points to look out for? I also noticed you can upgrade the hollow soldier shield to things like fire/lightning but does that do anything for the defense?
Silver knight is overall better, better resistence and only 2 less stability then maxed out hollow shield, only problem is it needs twinkling titinite to max out, which i guess really isn't a problem if you save them.
The 2 stability difference is essentially meaningless, it pretty much comes down to Silver Knight having slightly better defenses and Hollow being slightly lighter. --- You can't make an omelette without crushing dozens of eggs beneath your steel boot and then publicly disemboweling the chickens that laid them as a warning.
Also a difference bwtween the two is that Hollow soldier weighs 3.5 and SK weighs 5. If you can handle the extra weight Id go with a maxed out SK over a maxed out hollow b.c like someone else said the stability is pretty close and the elemental res on the SK are better.

All medium shields appear to have been nerfed, though some less than others. Silver Knight is at the top now, with 76 stability. The Balder Shield, originally a disappointingly mediocre shield when upgraded, is now pretty respectable (relative to other medium shields, that is) at 75 stability.
