how do you kick ?

I did it sometimes but i don't know how .. how to you kick ?

When locked on:

Up/Toward Opponent + R1

When unlocked

Any-Direction + R1

Do note that some weapons (curved swords, rapiers) don't have a kick, but rather a "retreating attack" of sorts.

Theres also a jumping attack that involves the same technique except with r2.

Pro tip, put your weight on your left foot by clicking L3 prior to F+R1
