I'm going to go play Demon's Souls again pretty soon. I've only beaten it once, and never really did any PvP. So, is it similar to DaS when I'm making a build? Stop at 40 for most stats, 27 for strength, etc, don't upgrade luck i'm pretty sure it was.
Also, is there a character creator somewhere so I can go ahead and min/max my stats? I tend to do that a lot and I'll need to know what class to start as.

Diminishing returns kick in at > 50 in DeS, as opposed to > 40 in many cases in DkS. This of course means that 27/40 is not a thing in DeS.
Luck is for BBS builds only, which are perfectly fine for competitive play. I would suggest looking up ggdoom's guide on the wikidot if you're curious about making one.
The Talisman of Beasts is popular for caster builds, but it requires a balanced distribution of Int and Faith to utilise, I don't recall the specifics (it's been a long time) but this is worth taking note of if you plan to make a caster.
You can treat Vitality and Endurance much like it is in DkS, i.e. Diminishing returns on HP gain kick in at > 50 for the former, and max stamina is achieved at 40 Endurance.
With every wave of interest in Demon's, I see people proposing to make str-faith/int and dex-faith/int builds as from Dark. If that's what you're looking for, I think the closest you can get is slapping on Light Weapon onto sub-50 dex weapons, 30ish str DBS, etc.
