Golden signs are warriors of sunlight, white are just regular joes.
I suppose the idea was that the gold sign would indicate who is the elite among potential co-op companions, since the WoS have a FAI requirement to get in (which decreases with every successful co-op session). In practice, they all mostly hover around the same level of mediocrity.

Gold are Warriors of Sunlight, as was said.
Doesn't seem anyone has said this, so I will: Summoning a gold phantom is the same as normal, except you are given a medal if you win with one on your side. These medals are traded to the Warrior of Sunlight altar as a member for some miracles.
