Predict and rollbs
Outpoke with katana instadash, roll towards them as they roll away and catch them with a rolling attack (needs prediction too and dwgr doesnt hurt either)
Grab a bow and poison arrows and annoy them from afar

It depends on the spear user. If it's some mindless spammer I'll just parry. If all they do is flip>poke>flip>poke keeping to their range I will either jump off a cliff or pull out a demon spear if I'm feeling up for a tedious, boring, and drawn out fight.
If you're using a strength build, you can pull out your highest AR weapon, poise up a bit, and just trade hits with them.
You'll always out damage them assuming you have a dedicated build.
It's not the best counter, but its an option.
The best counter to a spear user is just patience. If you need to turtle their spear strikes all day, then so be it. If you can make them bored, they'll start taking risks. Lame it out. --- Sully mah waifu
