Biggest changes since release?

I bought the game on release, played through most of it (had one more of the final four, plus the final boss to kill), but stopped playing, mostly due to time constraints. I've rented it again, and have decided to start with a fresh character rather than finishing off my current save. What should I know as far as changes to the game goes? I thought I remembered hearing that the ability to get the drake sword by shooting the tail was gone - stuff along that line.

The Drake Sword is still there.

Performance upgrades, enemies drop more souls, Crystal Ring Shield was nerfed, and humanity drops were greatly increased. There's more, but those are the only ones I can think of off the top of my head.

Iron flesh got dropped to worthless and twinling titanite is available at giant blacksmith. Certain things are less ridiculous like all the dragon parts in izalith. Those things used to make everyone so mad.

Dark wood grain ring users can be locked onto now,

Ghost / slims drop souls,

The white dress armor has had it's def nerfed to match it's weight (lvl 10 pvp griefers arn't as annoying)

cov's ave rewards (like passive damage buffs) at 80 turn in's?

Tranquil walk of peace was nerfed, I believe.

Hollow Solider Shield was massively nerfed (85 stability before at +15 to I think 70). I think this kind of thing was done to most small shields to make great shields more viable but HSS gets hit hardest.

The bugs in Blightown give you souls and don't infinitely respawn anymore (I think it's limited to 3 respawns each in a life). Skeletons also give you souls now?

Don't use the Magic Shield line of spells either as they have been dramatically nerfed and are longer the "God Mode" sorcery they once were.

Everyone's mostly just been talking about the nerfs, but I think it's important to note the good things, like how merchants have broadened their wares: everyone sells arrows, Vamos sells homeward bones, master key can be bought from Domhall, etc. Also invading/co-op is easier than ever.

The biggest change since release has not even been mentioned yet lmao

The dinos in lost izalith can be completely avoided now if you go the right path, as their aggro range has been nerfed to hell and back. No more 5 dino gangbangs for you Im afraid. :D
