Easiest enemies to farm?

Im SL 80 and not too long ago I killed Nito.

I used to farm souls on Ornstein and Smough but I'm not really finding a lot of people since most people have already killed him by then.

I'm currently using Nito at the moment since he's farther and he gives off 30,000 souls a pop when a phantom is in the game.

Is there an enemy now or farther on that I can assist people in fighting for large chunks of souls?

(Note: Nito's the only one I've killed from the 4 I need)

Bosses aren't the only way to farm souls quick. The Phalanx in the Ariamis take about 2 minutes from the bonfire to kill and get back the bonfire, maybe even less time than that. Silver Covetous Serpent ring and Symbol of Avarice can be used to gain extra souls to, whether your fighting bosses or not.

Some spoilers...

Depends on what you want to farm for. I have a couple of places i like to run:

For souls, it will you nothing else:
The forest/Darkroot garden. Gives you 7000 in a couple of mins. Start at the bonfire close to the entrance that you need to open with the item from Andre(20 k souls for this item, but it is worth it). Go down the stairs and stay close to the edge on the left side. Be careful, at one point it looks as though you able to pass between the edge and a tree, but you will fall.
Start by killing the axe wielding fighter, then move on to the "healer" and the thief. Finish with the mage.

Souls, purging stones and twinkling titanite: Beat Seath and light the bonfire at the bottom of the Crystal Cave and farm the clam-looking enemies. They will give you 1000 souls each and with your humanity at 4-5 they will also spawn twinkling titanite and purging stones in a very high rate. Did this the other day and got 6 purging stones and 12 twinklings in 6 runs.
Alternatively you can do this run from the bottom of Dukes Archives and farm the upgraded crystal dudes outside the Archive, right before the cave. This will net you more souls(1200 pr crystal dude), but the crystal dudes also give blue titanite shards(i think). This run takes longer and you need the miracle "Homeward" for it to work. Work you way all the way down to the clammys and cast homeward at the bottom...boom you're back in the archives. One of these runs will take 7-8 mins, but will net you a large amount of souls and some nice items.

Lastly: Get to the bonfire in Anor Lando, just after the snipers. If you have already beaten the snipers and opened the big door(to room right before O&S), you dont need to go past them again. The entire struckture is awailable via the main room(with the two seriously big knights and one sniper), the entrance to the lower parts is in the far right, through a narrow passage.
From this bonfire you can run through the castle, killing the nights there. They will net you 1 k souls pr night and they spawn titanite shards and weapons( i think that is 8-10 knights in there). When you enter into the big room, the large knights will net you 3000 each and with some humanity they will often spawn titanite chunks. This is also very close to a smith(giant smith), so you can easily drop in and spend some of those souls on some sweet gear.

Also; when doing pure farming, stay hollow. Item discovery is affected by your humanti counter on the hud and it is so frustrating running into an invader while farming.

Darkwraiths in new londo ruins give a better return on titanite chunks. They are easier to kill and a lot more than the royal sentinals in anor londo which there are only 2 and only drop 1 25% of the time.
The wraiths drop one fairly often and sometime drop 2, as well as having the chance to drop a dark hand and titanite slab.

I like farming darkwraiths with symbol of avarice and silver ring. Good soul AND chunk farming spot.

If purely for soul farming though, then its painted world all the way. The phalanx there can be WoG'd or Firestorm/tempested in 1 cast with 1-2 remaining at most, and give you 28k on ng+ with symbol of avarice and silver ring equipped, pretty much 50k/minute, it doesnt get any faster than that.
