How do people make all their Meepos poof at the same time?

I mean, I can do tab w click tab w click tab w click tab w click but that takes like 3 seconds

For me personally, I find that it's easier to put the hotkey to cycle through the selected meepos (I think tab by default) to a button on my mouse, and then I can spam that button while I spam w and it works out easier than using two keys. My hands seem to coordinate stuff like that better when I'm alternating hands (left hand W, right hand next meepo, left hand W, etc. etc.)

Just curious but does Unified Unit Orders work? I think the default is Ctrl. So if you Ctrl W to 1 meepo, wont they all poof?

Was it always like that in WC3? Maybe I'm thinking of Starcraft 1, but I'm sure when you used a spell while selecting a bunch of units, all the units would do it instead of just one.

No, it won't work, you cannot use Unified Unit Orders with hero units as Ctrl+Ability Hotkey is to skill up the ability which takes input priority over unified unit orders.
