What is the best starter class to begin with? I really like thief/mage style stuff, but I want to be able to solo dragons and dungeons with ease. Any ideas?

Skyrim doesn't really have those type of restrictions. There are some notable diffferences with race though.

I know there are no specific restrictions, I just wanted to know what direction I should send my character in to do what I want?

Argonian or Dunmer

Any race could be anything you just have to put in the effort.

It's a solo game. They can and are all suited to doing those things. Do what you like.

I made a Nord with sword and board. Pretty cliche but I found my self using my bow a bit and switching to melee weapons as the enemy gets close enough. I love the favorite menu.
