my character is a Redguard and I'm not really certain which path of weaponry to take. I know Redguards have a bonus to one-handed weapons and that was the path I originally planned to take, but at the moment I'm using 2H weapons more.
It just seems that one-handed with shield doesn't have any real benefits. Attacks still go through the shield and weapons do significantly lower damage.
I'm level 8 at the moment, so I'm certain things change, but I'd like to know what's considered "better" before I start investing in perks.

just dual wield one handers and level your stamina a lot. Much better than sword and board and slow 2handers

I think one-handed is superior, since shield bashes are great, if you invest in shield perks it has some amazing perks, and if you really need a two-handed higher power fix, you can just dual wield.
And if you plan to eventually use enchanted weaponry, two one-handed enchanted weapons will have double the enchantments of one two-handed weapon, so two-handed gets outclassed there.
PLUS a shield adds to your armor rating and can be enchanted, too, to boost health or magic resistance or something. Handy handy.

Two handed is.... just overpowered.
Not like archery and other things aren't either but....
It's the most powerful melee type, especially with the last perk at 100.

Hehe...I guess we each have our own preferences. I think I'll try the one-handed approach for a while now. Clear a dungeon with it and see how it feels.
I think the best one-handed weapon I have at the moment is the Axe of Whiterun. Took the Greatsword as the starting Companion weapon.
I like using a One handed sword with shield. My character is only satisfied when he shield bashes enemies.
Sword and Board actually makes dragon fights feel epic'er.
It's all fun and games until someone loses an eye, then it's a scavenger hunt.

when that slowdown kicks in against dual-wielders, you can just go to their back and attack all day
I've played all melee types extensively and 1H/shield is definitely my preferred. Two-handed worked better in the lower levels, IMO, but once the enemies started getting tougher, the on-demand stun from shield bashing along with the slowdown made all the difference. And the elemental resistances from the shield perk are incredible against homing dragon breath and mage alike (when the resistances are working, of course). Combine it with Atronach stone for almost complete spell immunity, or Lord if you really need 50 more armor.
Volundrung does let you power attack nearly infinitely to stunlock enemies, and obviously you're looking at a heavier perk investment with 1H/shield, but I think the returns are well worth it.
