Old problem, easy fix.
Uninstall Game Data AND the file that holds updates. Then let the game reinstall everything. It wont have an adverse effect on your save.
Enjoy the new and imporved Skyrim...

Don't worry TC, I just sorted this out the other day. Like the previous poster said, in the XMB, go to "game data" NOT "save game data" erase everything Skyrim related. Next time you load the game it will reinstall and download and install the latest patch again, and then, voila! You're back in business.
