Not sure if it is any different for the Stormcloaks, but the Legion's missions were extremely repetitive. Talk to Rikke, Invade Fort, Report to Tullius, repeat.

Not really sure what I was expecting but maybe some variation like infiltration missions would have been nice, the must fun I had was Defending Whiterun and Invading Windhelm.

Is it more fun going Stormcloak or is it the same dance?

Stormcloaks are worse I am guessing (have not done the legion yet) as you both invade Whiterun and Solitude meaning there is no defense mission.

It's more like an offense mission: running down barricades and whatnot.

the assault missions are bad at all; the worst part of ANY civil war mission is the first thing you have to do to join the stormcloaks. that in itself makes it almost not worth it.

Yeah, I was pretty disappointed too.

In some cases, I felt like skipping the help and sneaking into the fort and trying to kill everyone. Much to my chagrin, the soldiers charged in anyway.

They remind me of castle sieges in Mount&Blade but they lack the charm. For some reason they are also very buggy for me and the game sometimes crashes, fps is not stable and the soldiers often get stuck inside terrain or go "immune" to seemingly everything (Chain Lightnings cast at them looks funny though). Also for some reason the possible horses in the fort can join the fray which is funny.

I am not sure is it even possible to lose the sieges. Your allies seem to keep spawning too and just during normal play I haven't noticed any limit or threat of failure during those except your own death of course.

I wish the war was more dynamic where the opposing army might attack, trying to push you back to the point where you're defending solitude/windhelm

They're much more fun if you save them for after you've completed the main quest.
