I have a vita and Don't currently own a 3ds.
Technical internal specs and ''better looking games'' really means jack. Besides the vita doesn't have much at the moment and quite a few of the games that are out tend to be ports or hd remakes.
I agree having eye candy graphics are nice but it hardly makes a game ''good'', just pleasant to look at but it can very well be dull. Nintendo seems to like remaking the same dam mario games over and over but at least at this point in the 3ds there are a decent amount of games to pick from compared to the vita.
I don't even own a 3ds ( and i do own a vita) but just basing off game selection and variety the 3ds is more likeable. I own both a psp and ds system(s) i played more with my ds than i will ever play with the psp that's not to say i did not enjoy the psp game library.
The only reason i own a Vita right now is because of how immensely cheap i got it ( due to desperate people trying to sell them a few months ago). I am content with the system but had i come across a better deal on a 3ds i probably would have bought that instead. I mostly use my vita for browsing and netflix, not sure how the 3ds does in that aspect but i speculate a tad worse considering the specs.

I generally own both Nintendo and Sony consoles, and my preferences change between them on a case by case basis. My PSP got very little use compared to my DS but the games it did have (Disgaea, Prinny, Dissidia and FFIV being notable standouts) were enough to make me appreciate it.
So regardless of usage, the obvious optimal scenario would be to own as many consoles as possible. The primary reason why the Vita adoption has been so low compared to the 3DS is because the 3DS is able to make its money without making the customer feel like a chump. Every facet of the Vita is designed with distrust of the customer first and foremost, and as a user of official firmware across all systems I will not pay a premium to recoup losses from the actions of others.
I do not think this sentiment is unique. The casual users and giftbuyers look at the extreme prices and shy away. The informed buyer looks at both the prices and the reasons behind them and spends their money elsewhere. Who is left? People with more money than sense, which is fine, but relying on them is proving to be an unsound business decision.
And the longer Sony lets the Vita flounder, the more games 3DS acquires and the harder the fight to stay relevant will become. PSP was a distant second but still worth owning- right now the Vita matching even that legacy is a dream. And the fault for it lies solely with Sony. Action should have been taken half a year ago.

For the same reason why people like the PS2 more than the original Xbox. Sure the original Xbox had better graphics, but it didn't have the games the vast majority want. It's as simple as that.
The 3DS is the PS2 in this example. It has the games that people care about. Quite frankly I couldn't careless about a system having amazing graphics. I just want good games to play. The 3DS delivers that in spade.

It's really about the games and accessibility. The 3DS has a gigantic library thanks to DS support, albeit alot of shovelware titles but there are also many great games on that system. Nintendo also backs it up by providing many of their iconic games in their store. Where as Sony doesn't really care they have many games from PSone and PSP that could be put in the store but they aren't there. The few people that I know that own a Vita were also PSP owners, many of them wished they had kept their PSP instead of Vita just because of how many more games it can play. Vita is great tech but until Sony backs it and people make games for it, it will just be another what if. It's like have a Ferrari but you live in the desert with no roads.
