Is there any point in using the install data for this game if you have the PSN version and its stored on your memory stick anyway? Or would the install data just be a waste of memory card space?

It's not just a waste, it would actually make the game minimally slower.

It would be a waste of storage...
Install data are meant for UMDs to install some files to your memory stick so your PSP can load such files faster.

This is pointless for the PSN version of the game because all umd files of the game are already in your memory stick to begin with.
