Because visuals aren't going to get much better. That's why. Sure, there might be some more physics and particles involved, but for the most part we've hit the foreground. Developers don't want to spend 10+ years developing games. Consumers don't want to wait 10+ years for a game. Pretty simple reasoning. Until we've refined modeling software and programming languages to the point where it's a simple point-and-click, this is how it's going to be.
