Is there a way to take a picture of something on the screen and then upload it to the miiverse community? If so, how do you do that?

Hit the home button during game play and access miiverse. When you make a post, it will have screenshots available top right.

it does automatically from where the game is paused.

That is actually how it's done. As far as I can tell, only the current 2 screens are available. (That is, your gamepad screen and the tv screen)
