Would it be fair to rate ZombiU based on only having played the demo?

no, the demo is just a really small part of the overall game.

Did you factor out outliers or include them? You might want to in include the median as well to factor out the 0-1 outliers.

I did include outliers, as this is largely subjective and I can't easily have anyone prove that they have played the game or truly believe in their excessively low score, but it seems that participation is high enough to largely negate this. I am adding a disclaimer though, and from now on, I will include the median as well. (I will include Nintendo Land's tomorrow, which is 8.)

Technically, outliers are defined as 1.5 times the standard deviation away from the mean in either direction. So it doesn't matter what people's opinions are. If they have an extreme opinion in either direction it can be excluded because it is just so different from the true population average.

Plus a negative outlier can be FAR more extreme than a positive one considering the mean will be somewhere between 6 and 9 for the games you will examine.

That said, if you don't know how to calculate the standard deviation, or don't have the time to, I would be happy to if you could send me or post the raw data.
