Is this possible if Nintendo wanted to do so?

if so, would that mean that it could also render at 720p/1080p Wii games (without considering new textures for HD)?

It would probably do what it do now, render them at 480p and upscale them.

It's as easy as making a shortcut to enter Wii mode and start the disk.

Hopefully they'll do it with the OS speed upgrade, because with the current loading times there's really no point.
