A while back I plugged my Wii U into my cousins TV using the AV cables and now when I try to plug the HDMI cable into my HD TV and I try to convert the settings to 1080p, it doesnt work. It says to check that the TV is on and the ports are in, and everything is all set up yet for some reason the system tells me that it is unable to apply the settings. I tried 720p as well and that didnt work.

Anybody have any ideas on how to fix this?

Perhaps try a different hdmi input on your tv and another hdmi cable to make sure nothing there is wrong. If still can't figure anything out you will probably have to contact nintendo.
