Visually appealing, complex/challenging gameplay, and an complex story.

Last of Us as an example.

Mario Kart, Smash Bros, and Zelda is what i would call casual.

Everything you listed there is "mainstream". Due to their extreme popularity and visibility, they're widely played by both casual and hardcore gamers.

The term "hardcore gamer" means little anymore.

The term "hardcore game", however, still holds some meaning. Hardcore games are games that provide lots of challenge. Or that have huge amounts of depth (something we don't really see anymore). Very few modern games fall in the hardcore category anymore though, so it's barely worth using the term right now.

I don't think it has much meaning anymore. With the internet being what it is, it's like if a game is popular and liked then it must be dismissed as casual. If a game wasn't well liked by critics and less than 100 people bought the game then you have people hailing it as the greatest game ever made.

Not sure if you're serious, or trolling, on the bolded part. There are a lot of genres, from dungeon crawlers to complex sim games, that have none of what you mentioned and they're certainly not casual. In fact, they're far less accessible than The Last of Us (although to be fair, The Last of Us was a very "safe" game to release, despite being a new IP).

Anyway, "hardcore" and "casual" are just labels that gamers give themselves and others in order to feel superior. These days, if your favorite genre was puzzle games, you'd be considered a casual - but if you buy a game like Call of Duty that sells tens of millions, you're a hardcore gamer.

Not to mention a lot of **** that's getting hailed in this generation, such as large open worlds and deep characterization/stories, is nothing new at all and far to many people are trying to force gaming into a "respected" art form - without realizing Watchmen didn't become one of Time's greatest books of the 20th Century because Alan Moore tried to turn comic books into high art, it happened because he wrote a story mainstream critics accepted as such.
