The Wii U will be the definitive version for all games that appear on other consoles. Gamepad adds a lot, nothing more to it. Does everything the others do, and then some. Even if the gamepad features are crap, they are still added features which aren't on other systems.

It sure looks like the Wii U version of Rayman Legends is the definitive version, because apparently the Vita version is lacking the invasion levels, which are on the PS3/360/Wii U, while only the Vita and Wii U versions have the Murphy levels. That was the situation last time I checked, but I might be wrong.

Really only Need for Speed and probably Rayman Legends, the others you mentioned are debatable.
