Serious question, because I honestly can't think of any Nintendo games ever having a notable black character in them. The only one that comes to mind is that one black guy from Metroid: Other M who didn't really have anything to do with the story by himself but was just thrown in there with a bunch of other random characters.

Because Nintendo is a Japanese company, and the default setting for characters in Japanese media is "White". Characters of color, where they exist at all, are sidekicks or gimmick characters with MAN SO WACKY personalities. In Japanese media that is trying to be Very Grim And Serious, like war dramas especially, you may get decent depictions of characters of color, but they're still not the "main characters".

Just how their culture works.

Because developers tend to create characters based on their typical desires and people tend to desire things that are similar to themselves. Get more black people into game development and you'll get more black protagonists.

That is one, and another one that i know is Tom Nook from Animal Crossing (yeah i know is a tanooki, an animal but it fur is brown/black, so can count i guess)
