Personally there were two for me this gen:
Kid Icarus Uprising and Wonderful 101. Been playing KI:U for months and don't feel tired of it at all, would do the same with W101 but i have other games to play.
Before that? I'd say Metroid Prime with Pointer Controls. The Wiimote was as close to mouse precision as we could get yet it was barely utilized :\

Lots of good responses here so far. I wouldn't disagree with anyone who said Shovel Knight, Kid Icarus: Uprising, or Skyward Sword. I might add MH3U to the list. It was my first MH game and it blew away my expectations.
