making a quest, how to gauge enemy health

Hello, this game rocks! Aside from the obvious, when building an adventure what is the best way to judge what enemies starting hp and dmg should be?

Is there an easier way to align castle walls and fences? I'm also having trouble with hills that my character can fall down and get stuck, easy fix for that?

I love how many people play this and the eagerness to try new maps is astounding. Thanks for any replies!
