I've killed crabs before. Just pop 'em with a bullet and watch them flip. Kept me entertained a full half-minute.

Depends which birds are you trying to shoot down. You cant kill the ones that fly like robots; they have no joint in the wing and also fly in flocks.

I've also killed Rats and Lizards which do not go on the list.

The main reason for killing an animal (besides crafting items or making money) is that this unlocks corresponding handbook entries in the manual section of the game. So far I've encountered 42 different animal descriptions in the handbook. However, there are some animals, that can be killed, but do not have handbook entries (lizards, rats).

The FC3 wiki states that the "Moon Jellyfish" can be killed; I've tried to no avail. It also mentions bats; I suppose those are only found during campaign missions, right? However, it doesn't mention the heron.

When I did it, I just sat in an area where I had a clear view into the ocean, aimed at the middle of the school (use the sights) and fired. It took me a couple of goes but I got it eventually. Also, make sure you shoot the schools of fish, not individual ones. I wasted a good 1/2 an hour shooting my arrows at individual fish, not realizing you had to shoot the schools. <_<

^^ This. Try coordinates 837.5/802 for a good location to kill a coral reef fish.
