So, how exactly does the Composer turn humans into Prometheans? Does it like vaporize them, turn them in to data and then transfer the information back to the ship/send it somewhere?

Pretty sure it converts organic into data. Cortana makes a point of saying she could hear what was left of them after that one scene.
