I love both the wide openness and at the same time seclusion TP's Lake Hylia and Zora's Domain give off.
I would say the Lanayru Sand Sea as well but you don't get to see it in its true glory.

Great Bay, but I really like the setting of Spirit Tracks' Ocean Realm as well.
