Is there a list of all the bosses and their class types?
Probably somewhere. You can always just click them with your cursor (and any enemy for that matter) to see what level and classification it is.

Yes, vampires say humanoid if you click on them. The elemental weakness doesn't really make sense either.
Another odd one is Medusa. Every snake in the game is considered a draconic type enemy, but they made Medusa a demon instead.
The way it is now 6 bosses are demons, 5 are human, 3 are Natural, 2 are objects, 1 is undead, and 3(5 if you count each ancient dragon as a seperate boss) are draconic.
It would even out the boss types a bit if they changed Medusa and the Vampires.
So ancient dragon is weak to ice, right?

Soo, is there a difference between thunder and lightning that I don't know of? Or just a couple typos when making this fine list?
