Well in the new screenshots, the Rock Pikmin still have PURPLE flowers.

Those are buds. For all we know the purple buds mature into orange flowers.

It's very unlikely that a green leaf turns into a white or purple (or any other color) bud but that doesn't keep it from happening in both Pikmin games.

Leaf, to Bud, to Flower

The White Buds to White Flowers in the first.
The Pink Buds to Pink Flowers in the second.

Green Leaves are green because their always green.

Interesting point. Maybe their flower petals/leaves will change color based on season or temperature or region? Maybe that'll play an important role in Pikmin 3 (expanding on the each region is based on a season idea.)

The leaves change in autumn, not flowers. Neat idea, though.
Nintendo did do something like that once. Legend of Zelda: Oracle of Seasons

If they ever did something like that, it would as a spin-off of the main series. Like a 3DS game.
"Pikmin: Seasons" (only for the 3DS)

On the topic of you're second observation, it would be hilarious if you got a screenshot of a pikmin about to get eaten by a bulborb.
Hopefully that doesn't get spammed all over the Miiverse though.
