will this game be in 1080p ?

I'd guess that it will support 1080p, but I bet it's designed at 720p to help alleviate framerate stuttering when the screen fills up with people/vehicles/objects.

Most are 720p, but from what I've heard not always exactly true 720p, but a bit lower. Pretty sure MGS4 was 1080p though. Regardless, no one knows the answer to that question yet.

All PS3 games are either 720p or 1080i.

This is not true. There are ps3 games that run at native 1080p, but they are very few. A lot of games, such as MGS4, support 1080p, but the actual native resolution is 720p or even lower. Most games that claim to support 1080p are just allowing the system to upscale from the native resolution, whereas most games leave it up to your television.

I think MGS4 was native 1080p. My TV supports all resolutions offered by the PS3, and MGS4 is maybe the only game I own that runs at 1080p by default. And man, does it have some smooth, pretty graphics.

MGS4 does indeed have wonderful graphics, but it's not native 1080p. The game is upscaled to 1080p via the ps3 instead of your television. The number that displays on your television is not necessarily a game's native resolution, just the signal it is being fed. In this case, it is being fed an upscaled-to-1080p image.
