Press both R3 + L3 at the same time.

There must be some yellow in the bar though for you to be able to do it.

And yes, it can bail you out of a bad crash.

I wish theyd made the abilitys a bit clearer. I didnt use them at all for half the game because I didnt even realise id unlocked them yet. They should have at least forced you to use each one once so you knew how to do them.
