I don't know why, but I seem to be having a really hard time leveling up my Forging, medicine and crafting skills. I never seemed to be this bad at them in the past games so I was wondering if anyone had any tips. A thank you in advance.
If you're having trouble locating materials for upper-level weapons and armors, then just make Broadswords and Small Shields, and use Iron to upgrade them. Upgrading provides a fixed amount of experience, rather than being dependent on skill level.

Get a ton and I mean a TON of iron. Make small shields and broadswords. As much as you want. Now upgrade those suckers with the rest of your iron. And sell them when they hit lvl 10. Rinse and repeat till you have no RP left. Go to the autumn fields, head east to get your RP back up and do it all over again.

Crafting is the same, but here's the deal for those two: Both have items that actually sell for more than they cost in RP and materials. IIRC, For crafting, wool(s) -> yarn makes a 50 gold profit for a level 6 item (meaning 12 RP per craft). Later, you can use four yarns to produce one hand-knit scarf, which is a level 43 craft- you still make a profit, but it costs much more RP. For medicine, Purple Grass->Heavy Spice makes a 60 gold profit for a level 10 item, meaning 20 RP per craft. You can actually get up to Gigantisizer with this (I think level 56ish?), which is made with lamp grass- that's the easiest upper-level recipe I know of.
Anyway, wool->yarn and grass->spice should get you a decent way.
