Do pairings get EXP for both characters?

Or just the one that initiate the attack? In short, does my partner get EXP whether he be boosting my stats or making an attack alongside mine?

They have to attack along side you, and if they attack they get a little exp

You get very little.

I think you get 10 for a finishing blow while the other gains 30.

The Partner only gets EXP when they make an attack and it hits the enemy, it always counts as just EXP for hitting the enemy so the partner doesn't get the extra EXP for killing the enemy, the main unit gets it regardless of who killed the enemy.

What determines if your partner will attack the enemy? I couldn't figure out what made this happen in the demo.

Also, can the other player attack while NEXT to the main guy, or just when paired (or both)?

If units are paired up, there's a small chance the pair partner will join in on the attack. I don't know the exact calculations, but I believe LUK and their Support rating are involved.

I don't know if side-by-side units can attack together.

I think support levels boost the pair up attack rates. cause my two duos who are supported at B initate is a Ton and it says the % of it happening when you go to attack. i dont know stats directly change this though.

one interesting thing to note is that if you pair up say a horseman with my MU who is still default. if she spell blasts someone at range there is still a chance of her support partner attacking with say an iron lance at range. also there is support blocks which seam to just nullify damage and do a whopping 0 (i kinda flipped when my pegasus knight blocked an arrow for chrom cause i was afraid she was dead >.>)
