Is it possible to maximize a characters stats? Yes
Are the stats random through leveling up? Yes, to an extent

From what I understand everytime you change classes your stats remain the same, so they can only go up. So if you switch enough times you can max out your stats? I've also read somewhere along the lines since your level keeps adding on eventually the exp gets terrible - 8 a kill? Yeah, but maxing stats isn't hard at all. Getting optimal skills is the hard part

For breeding, it does who goes with who, but moreso for class options than stats, imo.

All I know is I want SOL and Lightning Speed on everybody I can put it on. So is it only females that can get lightning speed, or do I have to pair up the right parents to pass the trait down? MU, Gaius and Donnel go with Sully, Nowi and Tharja. Everyone should have galeforce this way apart from Laurent/Yarne/Gerome, I think. I'm not sure about Sol, since it's not as important.

What's better in this game, melee or magic? Is there a specific "best" class of anything? I was reading something about a "superior unit" that can be made with your avatar.

Sorcerer

So, make sure MU, Gaius, and Donnel go with Sully, Nowi, and Tharia in that order - or it doesn't matter what order? MU can go with any of the three?
Now for skills to pass over, do I have to learn the skills first or pair the parents?

On a side note i'd like to thank everybody for responding. I'm just going to keep this open so I can keep asking questions and save space on topics.

Also, if a male and a female character get an S rank early game - does that mean that they'll have the child together? Is there no changing it after that?

So for pairs and such would this be ideal?
Chrom X Olivia
Avatar X Nowi
Lissa X Libra (Sorcerer) / Ricken (Sage)
Maribelle X Libra (Sorcerer) / Ricken (Sage) / Lon'qu (Sage)
Sully X Donnel (Dark Flier)
Sumia X Henry (Dark Flier)
Cordelia X Lon'qu (Sorcerer) / Ricken (Dark Flier) / Stahl (Weapon)
Cherche X Gregor / Vaike (Berserker) / Frederick (Tanky)
Panne X Gregor / Frederick
Miriel X Stahl (Vantage, Luna) / Lon'qu (Vantage, Astra)
Tharja X Gaius (Galeforce, Sol)

Or

chrom / olivia = inigo and lucina
MU / lucina = morgan
gaius / tharja = noire
donnel / nowi = nah
henry / sumia = cynthia
gregor / panne = yarne
libra / lissa = owain
ricken / miriel = laurent
kellam / maribelle = brady
stahl / cherche = gerome
vaike / sully = kjelle
lon'qu / cordelia = severa

Trying to do as much research as possible before actually doing it - don't wanna screw up.

Alright, I think I have the pairs down... I'm gonna stick with the first group. The mentality for the playthrough is to take down TSON. Still learnin' the basics though.
Also, why exactly is the "gold pack" DLC the best grindan in the game?

EXPonential Growth (the EXP map) isn't actually very good for grinding, except in the very beginning. At higher levels, SpotPass maps will give you more enemies who aren't always trying to run away from you.

But the other two maps in the pack are worth their weight in plutonium. The Golden Gaffe can net you over 70,000 gold in a single run-through later in the game, and even early in the game it's still the best way to make money, especially on higher difficulties. Infinite Regalia, meanwhile, is exactly what it says on the tin: it'll be a while before you can handle the difficulty, but it will give you three of the game's best weapons every time you go through it (as long as you're careful not to kill the boss too soon). Even better, though, is the Silver Card that you get on your first run through it: once you have it, all shops will charge you only half price for the rest of the game.
