I haven't yet completed the game because I'm unsure of what will happen, so I just keep grinding the same path over and over again, purposely avoiding a path that will lead me to the end of the game.

I assume you're not forced into NG+, but if you choose to not start NG+ and stay back in OG, is there anything to do? Do any bosses respawn or do you just fight "trash" mobs until you get to the end? Just trying to figure out the best thing to do so I don't waste the time/gold spent.

You should just go through and beat it, once you beat the God King it resets all the other deathless and you can go through the entire story again.

Now, you think this would be the case with new game + as well BUT its not. If you beat the God King on new game + you are forced into the next one (lose all items and money). Why it is not consistent across the two modes does not make sense to me either.
