If I change the difficulty right before beating it, will it count?

No, of course not. Even if you played the first five minutes of the game on Easy, and the rest on Survivor, it'll still count only as Easy.

If it's anything like Uncharted, it goes with the minimum difficulty level that it was set to over the course of the game.

No. You aren't going to cheat the system - I'm not sure why you would assume you could.

what it does is, it selects the level which was completed on the easiest difficulty, and sets the entire run as that difficulty.

Lets say you completed everything on survivor, 1 mission on hard and 1 on easy. The game sets it as easy. If you complete the easy mission on survivor, it will set it to hard. Complete that one on survivor and the entire run is finally survivor.
