Rock Head, no contest. Having to use Double-Edge without worry (Rock Head's effect) is far better than complete immunity to moves such as Horn Drill (Sturdy's effect)--seriously, who uses those one-hit knockout moves in serious competition?
I am a die hard Pokemon fan to the most, including the traditional hate of Yu-Gi-Oh.

You can sturdy a ohko and use rock polish.

Sturdy also prevents moves from killing you if you're at full health.

Sturdy functions like Focus Sash in generation 5 so it's much better than Rock Head. Golem doesn't need Double-Edge anyway, it gets almost perfect coverage with its STAB moves and can't win against most pokemon that resist the combo (Torterra/Claydol) anyway.

Sturdy. Rock Head is useless since STAB Earthquake/Stone Edge will still hit harder than no-STAB Double Edge. Sturdy also allows Golem to survive an attack that it normally wouldn't and counterattack, or set up a Rock Polish.

Sturdy, but ONLY because I don't really like getting OHKO'd by Water moves, Grass moves, or any special Ice, Ground or Fighting moves. Just isn't my thing.
