I know, I know... "ew, eggplant?" But it's honestly delicious on a pizza. It's got a thickness to it that's kind of like sausage, but without the heft... it's hard to describe, but it makes the texture of your pizza amazing.

Pizza always comes with cheese, it must be a good topping. Not a big fan of Mushrooms or Italian sausage, peppers or onions, but I like black olives.
