How do you prioritize stats?

Speed, Accel, etc. Your mods, basically.

Also, is there any rule for surviving in the air or water as far as boosts and drifting go?

Hmm, just know when you should be drifting when your on the water. When you drift on the water, you start turning towards the opposite wall faster. Other than that, I'm not too sure yet. Just like in cars, in planes you are able to drift in the air almost in a straight line, but eventually you start turning.

I mainly use mods that accommodate for the track like handling or acceleration but so far I find sonic's super speed mod to be pretty useful.

I use Sonic, and the reason I'm asking is because it seems every racing game has its own schtick. Mario Kart Wii is about Flame Runner or top speed and bikes, Mario Kart 7 is a little bit of everything and I'm good with my acceleration build, Sonic & Sega All-Stars Racing is about drifts, and so forth.

If this is built around top speed, I'll just use Sonic's speed mod. Otherwise, I'd much rather use Acceleration or Handling so I don't lose control during my drifts. Also, what matters more? Top speed or boosts?

When you're playing in an actual race with items, acceleration is very important since you'll be getting slammed by items. However, for time trials and boost races you want as little handling and acceleration as possible to give yourself maximum possible boost and speed.

For Drafting, Handling Mod is for you.

For Boosting, Put all on Purple Slot (Boost) Mod.

For Race, just Speed (Sonic liked this)

It depends mostly on stage and what you're doing. Speed and Acceleration are important for races, Handling and Boost are for Boost Races, Handling and Speed are for Drift Challenges and Ring Races & Speed and Boost are for Time Trials.
