How would YOU design quests?

Change this formula Kill X of this enemy Collect Y from this enemy and turn into Z NPC.

Make it actually feel like an Elder Scrolls game and have the quests send you down into old dungeons and ruins to find treasures.
Killing means never having to say you're sorry.
